Meet Me

Welcome to Just Enough Hippie! I am Genta, the creator behind this platform.  I am married to my high school sweetheart, Terrell, and mama to Rilynn (10) and Luke (5).  We grew up in the Texas panhandle but now call Frisco our home and we love it here.  Most of our family still lives there and some in south Texas.  Family is everything to us so we love to go and visit every chance we can.  I honestly never considered myself a writer or thought of starting a blog.  My only thoughts I’ve shared are through the tiny squares of Instagram.  The idea of Just Enough Hippie came a couple years ago when my husband had made the comment of me being ‘super hippie’ and I remember telling him “no, I think I’m just enough hippie.” (I was always telling him to try my essential oils and try all the ‘all-natural’ things/foods) And we both immediately thought, that’s just a good slogan for something! So it has since always been in the back of my mind.  After I decided to start a blog and us trying to brainstorm name ideas, he immediately said “it needs to be Just Enough Hippie”. It fit perfect for this space and what I want to share here.

I have always had a passion for cooking and trying new healthy recipes.  I’m not always the best at following a recipe but thats always the fun part for me, adding in something different to see how it turns out and hope for the best.  Most of our weekly dinners involve coming up with some sort of hash dish with as much veggies and spices I can throw in.  Hoping the hubby approves, and he usually does :)  A little over a year ago my husband had to go on a strict AIP diet and I think I was a little more stressed about it than him because I was going to be cooking all this for him.  If you aren’t familiar with what AIP is, I promise to do a whole post about it, because I honestly had no idea what it even stood for.  The first few months of this were a little stressful for us both but we survived and I have figured out recipes that our whole family can enjoy and not having to make separate dinners for us and the kids. I’m excited to share some of our favorite AIP recipes, along with Paleo, and vegan dishes.

We love anything DIY, and have built a lot of furniture in our home.  If I think we can save even a little bit of money, I will enlist the hubby to build it and I do the painting/staining.  It’s therapeutic for me.  I can’t wait for it to warm up so we can start some more home projects. (I already have my list ready to go) Thankfully he is always on board!

I’m excited and thankful that you are here.  I hope that you leave this space feeling inspired and encouraged. There’s a little bit of hippie in us all, maybe not a lot, but just enough.

xoxo, Genta
